Add some pineapple juice to your mojitos for an extra-tasty, summery drink!
You could buy some good quality pineapple juice for this recipe, or make your own if you have a juicer! Mojitos are one of my favourites on a hot summers day – so refreshing and cooling. Lots of ice is the key! Leave out the rum for a great drink for kids or non-drinkers. I love having these pineapple mojitos as part of a Mexican themed dinner party – think Mexican Fiesta Tacos with all the trimmings, as well as this bean dip and Mexican street corn! Perfect for casually entertaining friends, sitting outside. You could prepare these in advance by combining everything except the soda and ice in a jug, then when it’s time to serve add a big handful of ice to each glass, some of the rum mix and top up with soda water.
- fresh mint leaves 1 cup
- sugar ½ cup
- white rum 2 cups
- freshly squeezed lime juice ½ cup
- pineapple juice 2½ cups
- soda water 1½ cups
- lots of ice
- Bash the fresh mint leaves with the sugar in a mortar and pestle
- Mix the mint and sugar with the white rum, lime juice and pineapple juice in a large jug filled with ice
- Top up with soda water, pour into glasses and say cheers!
