Pico de Gallo (Tomato Jalapeño Salsa)

This fresh salsa adds a big burst of flavour to so many dishes! The jalapeños are key, so make sure you add them!

Ingredients

  • vine-ripened tomatoes 6-8, diced
  • Lebanese cucumber 1 (or ½ Telegraph cucumber), diced
  • red onion ¼ cup finely diced
  • pickled jalapeños ¼ cup chopped (from a jar)
  • lemon juice of ½
  • extra-virgin olive oil drizzle of
  • coriander ½ cup chopped

Method

Mix all ingredients together and season to taste with salt.
