- vine-ripened tomatoes 6-8, diced
- Lebanese cucumber 1 (or ½ Telegraph cucumber), diced
- red onion ¼ cup finely diced
- pickled jalapeños ¼ cup chopped (from a jar)
- lemon juice of ½
- extra-virgin olive oil drizzle of
- coriander ½ cup chopped
Mix all ingredients together and season to taste with salt.
