Quick Maple-Grilled Bananas
This is a super quick and guilt-free dessert of grilled bananas that you can whip up in under ten minutes (also makes a quick and nutritious breakfast!).
Ingredients
- 4 ripe bananas
- 1 teaspoon ground cinnamon
- 2 tablespoons pure maple syrup
Caramelised pecans
- ¼ cup pecan nuts chopped
- 2 tablespoons pure maple syrup
To serve
- 4 tablespoons natural unsweetened yoghurt or coconut yoghurtdairy-free
Instructions
- Preheat grill to 200degC/390 Fahrenheit or on high. Line an oven tray with baking paper for easy clean up.
- Trim the stalks of the bananas, then cut them in half lengthways. Arrange on prepared oven tray, cut-side-up. Sprinkle over cinnamon and drizzle over maple syrup. Place under grill for 10-12 minutes until bananas are starting to bubble and turn golden brown.
- Toast pecan nuts in a dry fry pan (no oil required) for a few minutes on medium heat. Turn off the heat and add maple syrup – it will start to bubble and caramelise – stir while it bubbles to coat the pecan nuts.
- To serve, place two grilled banana halves on a plate and scatter over caramelised pecans. Serve with a dollop of yoghurt on the side.
Notes
The flavour combination of bananas, cinnamon, maple-syrup and pecan nuts is absolutely delicious. This recipe even uses ingredients you’ve probably already got in the pantry. I think this tastes great with coconut yoghurt, but Greek yoghurt or ice cream would be great too. The banana looks so good with its skin on still, all sticky from the maple syrup – yum!
