Pico de Gallo (Tomato Jalapeño Salsa)

This fresh salsa adds a big burst of flavour to so many dishes! The jalapeños are key, so make sure you add them!

Ingredients
  

  • 6-8 vine-ripened tomatoes diced
  • 1 lebanese cucumber (or ½ telegraph cucumber) diced
  • ¼ cup red onion finely diced
  • ¼ cup pickled jalapeños (from a jar) chopped
  • juice of ½ a lemon
  • drizzle olive oil
  • ½ cup coriander chopped

Instructions
 

  • Mix all ingredients together and season to taste with salt.
