Caramel Coffee Walnut Slice

This recipe should come with a warning: make sure you’ve got lots of people to share it with, because if not you’ll end up wanting to eat the whole thing yourself!

Ingredients
  

Base

  • 125 g butter
  • 3/4 cup fine rolled oats or plain flour use GF flour if you need to
  • 3/4 cup desiccated coconut
  • 3/4 cup brown sugar

Filling

  • 125 g butter
  • 1 1/2 tablespoons instant coffee granules optional
  • 1/3 cup golden syrup
  • 2x 395g canned sweetened condensed milk

Topping

  • 175 g dark chocolate
  • 50 g butter
  • 3/4 cup walnuts roughly chopped, optional

Instructions
 

  • Preheat oven to 180degC. Line a 20x20cm tin with baking paper.
  • To make the base, place oats/flour, coconut and brown sugar in a bowl. Add melted butter and mix together until well combined. Press mixture into prepared tin and bake for 15 minutes or until light golden brown.
  • To make the filling, place butter, coffee granules (if using), golden syrup and condensed milk in a saucepan and stir over low heat until the butter has melted and coffee has dissolved. Pour caramel over the cooked base and place back in the oven to cook for a further 25 minutes until golden and a little bubbly. Refrigerate until cold.
  • Place chocolate and butter in a bowl and microwave for 1-2 minutes (stirring frequently) until melted, or melt together in a double boiler, or in a heatproof bowl over a pot of simmering water. Pour over the set caramel and smooth over with a spatula. Sprinkle over walnuts (if using). Refrigerate until cold before cutting into pieces.

Notes

Tip: To get nice, clean-cut slices, dip a sharp knife into hot water for 5 seconds and dry with a tea towel before each cut.
This is an old recipe from my childhood – I’d make caramel slice, wrap pieces up in baking paper and give it away as gifts. It is incredibly indulgent and decadent, so you only need a small piece…but I’ll admit I can’t keep going back and slicing off a bit more every time I pass the kitchen bench when it’s around! You can turn this into a classic caramel slice by omitting the coffee and walnuts.
