Guide Dog Shortbread Cookies
This is a fun shortbread recipe to make with kids, especially with cute animal cookie cutters!
Ingredients
- 250 g butter
- 140 g caster sugar
- 1 egg yolk
- 300 g plain flour
- ½ cup dark chocolate grated
Instructions
- Cream butter and sugar until light and pale, about 5 minutes. Beat in egg yolk. Add flour and dark chocolate and mix well.
- Wrap dough in cling film and chill in the fridge for 30 minutes. Preheat oven to 180°C and line an oven tray with baking paper.
- Tear off squares of baking paper about 30x30cm. Place the dough between the 2 sheets and roll out to a thickness of about 1 cm. You can use 2 pencils under the rolling pin to act as a guide.
- Cut out your shapes using your cookie cutter. Transfer the cut out biscuits to the prepared oven tray. If you find the dough breaks easily, just pop it back in the fridge for 5 minutes to firm up again.
- Bake for 12 minutes, or until golden on the edges. Cool on a wire rack before icing.
Notes
I made this shortbread cookie recipe for the NZ Guide Dog ‘Red Puppy Bikkie Day’ – a fun (and yummy!) way of helping to raise awareness and money for more guide dogs for the blind. I used a basic icing with red colouring to make the eyes and blankets for the dogs.
