Dark chocolate and avocado vegan truffles

Truffles are a festive favourite, so I’m excited to share this vegan truffles recipe perfect for those with special diets.

While I love my regular truffle recipe, it’s full of dairy which isn’t ideal for some people. With the help of the trusty avocado (what can’t they do?), vegan truffles can be enjoyed by everyone. You can experiment with flavours and produce a few different options for guests to sample – such a Raspberry and Almond or Hazelnut using this recipe as the base.

This recipe is from the December/January issue of NADIA magazine. If you like this recipe you’ll love my Magic mini vegan pavlovas!

Ingredients

Print Recipe

  • good-quality dark chocolate 250g (at least 60% cocoa solids; I used Whittaker’s 72% Dark Ghana. Check label if eating vegan or dairy-free)
  • avocado flesh of 2 large, just-ripe
  • coconut cream ⅓ cup
  • pure maple syrup 4 tablespoons
  • Dutch cocoa powder 4-5 tablespoons, plus 2-3 tablespoons extra for coating

Method

  1. Break chocolate into pieces and melt in a double boiler or in a glass bowl set above a pot of simmering water (just make sure the water does not touch the bottom of the bowl or the chocolate may burn or become grainy), stirring every now and again. Alternatively, melt in the microwave on medium power, stirring at 30-seconds intervals, until almost melted. Then stir until smooth and glossy.
  2. Place avocado, coconut cream, maple syrup, cocoa powder and melted chocolate in a food processor and blend until creamy and smooth. Transfer to a bowl and refrigerate to cool slightly.
  3. When the mixture has hardened slightly but is still mouldable, remove from the fridge. Tip the extra cocoa powder on a plate. Use a teaspoon to scoop small balls of mixture and roll to form even-sized truffles.
  4. Roll truffles in the cocoa powder then place on a plate or tray. When you have rolled all the truffles, place them in the fridge to harden then store in an airtight container in the fridge.
