Caramel Coffee Walnut Slice
This recipe should come with a warning: make sure you’ve got lots of people to share it with, because if not you’ll end up wanting to eat the whole thing yourself!

Base
- 125 g butter
- 3/4 cup fine rolled oats or plain flour use GF flour if you need to
- 3/4 cup desiccated coconut
- 3/4 cup brown sugar
Filling
- 125 g butter
- 1 1/2 tablespoons instant coffee granules optional
- 1/3 cup golden syrup
- 2x 395g canned sweetened condensed milk
Topping
- 175 g dark chocolate
- 50 g butter
- 3/4 cup walnuts roughly chopped, optional
Preheat oven to 180degC. Line a 20x20cm tin with baking paper.
To make the base, place oats/flour, coconut and brown sugar in a bowl. Add melted butter and mix together until well combined. Press mixture into prepared tin and bake for 15 minutes or until light golden brown.
To make the filling, place butter, coffee granules (if using), golden syrup and condensed milk in a saucepan and stir over low heat until the butter has melted and coffee has dissolved. Pour caramel over the cooked base and place back in the oven to cook for a further 25 minutes until golden and a little bubbly. Refrigerate until cold.
Place chocolate and butter in a bowl and microwave for 1-2 minutes (stirring frequently) until melted, or melt together in a double boiler, or in a heatproof bowl over a pot of simmering water. Pour over the set caramel and smooth over with a spatula. Sprinkle over walnuts (if using). Refrigerate until cold before cutting into pieces.
Tip: To get nice, clean-cut slices, dip a sharp knife into hot water for 5 seconds and dry with a tea towel before each cut.
This is an old recipe from my childhood – I’d make caramel slice, wrap pieces up in baking paper and give it away as gifts. It is incredibly indulgent and decadent, so you only need a small piece…but I’ll admit I can’t keep going back and slicing off a bit more every time I pass the kitchen bench when it’s around! You can turn this into a classic caramel slice by omitting the coffee and walnuts.
