A succulent, whole roast chicken is hard to beat. It’s comfort food. However be careful not to over-cook it and make sure you let it rest for at least 15 minutes after cooking to let all those delicious juices re-absorb into the meat, keeping it moist and juicy. As chicken breast is so lean, it has the tendency to be dry and tough if over-cooked so it’s also best left to rest after cooking. Chicken makes the ultimate quick and tasty meal as it cooks so quickly and takes on other flavours so well. I’ve compiled some of my favourite chicken recipes that will keep your plate fresh and exciting all year round. From my favourite healthy summer salad recipes, Asian-inspired curries and soups to my spin on all-time favourites like Arabian Roast Chicken, you’ll find it all here.
