Lime, Coconut, Banana Smoothie

I like to call this my ‘Green Colada’ smoothie recipe – it’s fruity, refreshing and delicious with a kick of lime, just like a pina colada, only much better for you!

Ingredients
  

  • 1 ½ cups spinach leaves chopped
  • 2 cups fresh ripe pineapple or you can use canned pineapple, chopped
  • 1 banana or avocado ripe
  • 1 lime juiced
  • 1/3 cup coconut milk
  • 1-2 teaspoons liquid honey optional
  • 5-6 ice cubes
  • 1/3 cup water

Instructions
 

  • Place all ingredients in a blender and blend until smooth. Add a little more water if needed to achieve your desired consistency. Pour into glasses and serve.

Notes

I have made it with coconut milk to get that tropical pina colada flavour – but if you don’t like the taste of coconut milk, or want something a little bit lighter, you can substitute it with coconut water or any type of milk. If you want a stronger lime flavour, you could add the flesh (skin removed) to the blender rather than just the juice! With all the delicious flavours going on, you won’t taste the spinach (but your smoothie will be lovely and green!)
