Easy Spring Recipes
Spring into spring: I love spring time and the abundance of easy spring recipe ideas. As well as daylight saving and frolicking lambs, there’s asparagus, avocados, globe artichokes, snow peas, broad-beans and strawberries to look forward to.
With winter’s end, I look forward to saying goodbye to rich hearty stews and casseroles and saying hello to lighter, fresher tucker. It’s time to stow away the slow-cooker and make way for quick toss-together crunchy salads, pastas and stir-fries. These quick, casual meals using the new season’s fresh produce allow you to spend more time outside and less time in the kitchen!
At this time of year you may your find your jeans a tad tighter after all the stodgy winter fare and sitting cozied up on the couch. Now that daylight saving is just around the corner, it’s the perfect opportunity to grab your walking shoes and get a quick 20-30 minute brisk walk in before dinner. With these fast and easy throw-together recipes you’ll be able to whip up dinner when you get back and still have time to dine al fresco before sunset.
All three recipes are packed full of seasonal spring vegetables – the spring filo baskets make a perfect lunch or starter; the lamb and asparagus panzanella is one of those super-tasty, toss-all-together meals and the broad-bean and mint risoni is a light refreshing little pasta dish that will please everyone.
