Black Doris Plum and Gin Sorbet

This recipe is the epitome of simplicity reigns supreme. In my opinion this tastes better than any sorbet you can buy. Tinned Black Doris plums are intensely flavoured; tart and sweet, however you can use stewed fresh plums too.

Ingredients

  • canned black doris plums 1 x 850g can, juice reserved
  • gin 50ml

Method

  1. Cut plums in half and remove stones. Place plums in a dish or container, or lay on a tray lined with baking paper, and freeze overnight until hard.
  1. Place frozen plums in a food processor with gin and a couple of tablespoons of the reserved plum juice, blend until smooth.
  1. Return to container and freeze until hard.
